Seems like the Symbols in Workspace view wont list any symbols I have defined statically / in my .c files.

I've searched and found people have posted about this problem before with no responses. Is this problem known? Will it be addressed? Pretty please?

VA X parses all headers, not all source files, when you open a project. Hence, VA X does not know about symbols defined only in source files.

We will consider once again changing this practice and hence, be able to give you what you want.

If this was a design choice maybe at least make it a user option?
