Why does VAX parse the UE5 source code for each UE5 project?

It takes hours!

There is only one UE5 engine code, and there can be any
number of projects. So why can't all projects (with the
same engine code) share the parsed information?

VA_X.dll file version 10.9.2393.0 built 2020.10.28
DevEnv.exe version 16.11.32002.261 Community
msenv.dll version 16.0.32002.118
Comctl32.dll version 6.10.19041.1110
Windows 10 10.0 2009 Build 19043.1766

Where do you have your Unreal Engine source code installed to? There is a known limitation in VA, that it wont correctly pick up the Unreal Engine directory tree if it installed outside of "C:\Program Files\", so this might be what you are seeing. If you are then there is a work around for this.

If Unreal Engine is installed under "C:\Program Files\" then if you look at:

VA Options -> C/C++ Directories

are all of the directories inside your Unreal Engine directory tree listed? They should be.
